Recipes: Chicken Meat in Honey and Sweet Couscous & Asian Risotto





"Asian" Risotto
(Healthy, low-cal) 
 
Let shiitake soak in water for 1 hour. After ca. 30 minutes from putting them in water, cook whole grain rice (prepare it so that there’s no water at the end of cooking - generally the volume of water should account for 7/6 or a bit more of the dry rice volume, I usually use the highest T for 1 minute, medium for 5 - 10 min, very low for 20 min and no heat at all for 10 - 20 min with the lid still on). When the shiitake have been soaking for 1 hour, put them in boiling water and boil them for 5 minutes. Add shrimps, vegetables (I got a mixture for Chinese dishes) and oyster sauce (one teaspoon or so) and cook for additional 5 minutes. Get rid of most of the water and pour the remaining bit of it over the rice. Add the boiled veggies and shrimps and also shiitake - it’s probably better to cut them into pieces. Stir until all the water evaporates.
The salad is thinly peeled radish with some spicy pepper.





Chicken in Honey and Sweet Couscous
(Not so healthy, medium-cal) 

Put some chicken meat on a bit of oil and fry on both sides for a short time. Then lower the temperature a bit, add a tiny bit of water and pour some teriyaki sauce on the meat. Meanwhile mix couscous with a bit of oil in a pot and boil water. Pour the water over the cous cous so that there’s ca. 2 cm of water above the level of cous cous and cover with a lid. Put some honey and pepper on the teriyaki-soaked chicken. After some time, turn the chicken over and do the same with the other side. Repeat twice. If you plan your meals one day ahead, you can also put the chicken meat inside this mixture overnight, and it’s good with garlic too, but I wouldn’t use garlic if you make sweet cous cous as a side dish. Anyway, while the meat is cooking/frying, cut dried dates, apricots and cranberries into tiny pieces and mix them in the cous cous. If there’s still water, heat it for a bit until it evaporates. Pour in some sweet white wine (I think it’s really good with sweet aperitifs like Cinzano bianco too, but my mum almost got a heart attack when she saw me cooking with it XD). For serving, use a Christmas cookie cutter to arrange the cous cous into an interesting shape (It’s sticky, so it’s easy). Put the cutter on the plate, fil it with cous cous mixed with fruits (don’t forget to press) and then while pressing the cous cous with a spoon, lift the cutter. If your hands don’t shake, you can make several “levels” of these shapes, simply put the cutter on the first level and repeat. Cut the meat into pieces or leave it as it is, it doesn’t really matter. I used scallion and a cranberry as deco, but I think that  fresh fruit would be good too. This recipe was inspired by a recipe from “Chuť a styl”, I just prepared the meat differently and changed slightly the way of preparing the cous cous.

"Asijské" risoto 
(Zdravé, nízkokalorické)
Na hodinu namočte shiitake do vody. Po cca 30 minutách, co se vesele máčí, dejte vařit celozrnnou rýži (uvařte ji tak, aby tam na konci nebyla žádná voda - tzn. voda by měla mít objem o hodnotě cca 7/6 hmotnosti suché rýže, nebo trošičku víc, já většinou vařím při nejvyšší teplotě minutu, při střední 5 - 10 min, při nejnižší 20 min a nakonec na vypnuté plotýnce cca 10 - 20 min s pokličkou stále na hrnci). Když už jsou shiitake po své hodinové koupeli, vložte je do vroucí vody a vařte 5 minut. Poté přidejte krevety, zeleninu (prodává se předpřipravená čínská směs, mají ji například v Tescu) a trochu ústřicové omáčky (mají ji například v Globusu), vařte dalších 5 minut. Poté slijte většinu vody, vylovte shiitake a nakrájejte je a zbytek vývaru i s nakrájenými houbami nalijte do hrnce s rýží. Míchejte, než se vyvaří voda.
Salát je z jemně „naloupané“ ředkve a pikantních paprik.





Kuřecí maso v medu se sladkým kuskusem
(Ne tak zdravé, středně kalorické)

Na trochu oleje na pánvi dejte kuřecí plátky a lehce je osmahněte z obou stran. Pak snižte teplotu a nalijte na pánev malinko vody a maso polijte teriyaki omáčkou. Kuskus smíchejte v hrnci s troškou oleje a zalijte jej vroucí vodou, tak aby okraj vody byl asi 2 cm nad okrajem kuskusu a přikryjte hrnec pokličkou. Na kuře s teriyaki omáčkou nalijte trochu medu a nasypte pepř, po nějaké chvíli plátek otočte a totéž proveďte s druhou stranou. Všechno opakuje alespoň dvakrát. Pokud si na rozdíl ode mne plánujete jídla více dopředu, můžete kuře do medu s teriyaki omáčkou a pepřem naložit i přes noc. Je to dobré i s česnekem, ale ten se nehodí moc k tomu sladkému kuskusu. Er, zpátky k tomuto receptu. Zatímco se dělá maso, nakrájejte na malinké kousky sušené datle, meruňky a brusinky a nasypte je do kuskusu. Pokud tam zbyla nějaká voda, zapněte pod kuskusem sporák, aby se vypařila. Nalijte do kastrolu trochu sladkého bílého vína (podle mně je to ještě lepší se sladkým aperitivem jako Cinzano bianco, ale máma skoro dostala infarkt, když viděla, jak velkopansky vařím XD). Na naaranžování jídla na talíři použijte vánoční vykrajovátko - položte ho na talíř, vyplňte kuskusem (hodně tlačte), poté přitlačujte kuskus lžící a vykrajovátko zvedněte. Můžete přidat i další patra, kus kus je lepkavý a dobře drží. Já jsem takhle navrstvila 3 patra zcela bez problému. Na dozdobení jsem použila kousek naťové cibulky a brusinku, ale bylo by to hezké a dobré i s čerstvým ovocem. Tenhle recept je inspirovaný jedním receptem z „Chuť a styl“, ale připravila jsem jinak maso a pozměnila přípravu kuskusu.
