Mistress of the House





My parents happen to travel fairly often because of work and it sometimes happens that they’re both gone at the same time. So just the other week, I was left alone as the slave of my (not so) little brother, two bloodthirsty cats, a toady dog, and an apathetic chinchilla as the mistress of the household. I spent most of the time staggering around the house like a zombie (even one of my feet started to turn bruise-like purple), not sleeping properly at night, and sleeping way too deeply at noon. What wakes me up perfectly from these zombified states (which are a result of euphoria whenever the month of exams ends rather than a side-effect of not being under parental control) is the big red circle around the date when my dear parents return back. So, just like that, I woke up from my daze, cleaned up the whole house and made some madeleines. During my stay in France in Angers, B. and me got a tip for a nice English teahouse (yes, Vita is the only person drinking yucky Belgian beer in Irish pubs and visiting English teahouses when she stays in France) from our local friend. And I ordered a very delicious tea, of course, but also some scones with mascarpone and marmalade. And since I thought madeleines are kinda scone-like, I decided to serve them to my father upon his victorious return from his business trip with mascarpone (Kaufland bought) and a strawberry marmalade (grandma-made). Since you only need a small bit of mascarpone (even if your slightly modified recipe gives you 25 madeleines instead of 12 promised in the original method), I needed to dispose somehow of the rest of the pot, so I made tiramisu as well, to get my mum back in shape, because she always looses weight on business trips.

Ah, all this was just a boring prelude to the two recipes - even though you can find plenty of recipes for both tiramisu and madeleines on the net, I quite like these two, which resulted from my continuous inability to follow instructions properly.

Lazy Girl’s Tiramisu
A pot of mascarpone
A cup of cream meant for whipping
Powdered sugar
Instant coffee
Rum
Bitter cocoa
Some decoration
Sponge-biscuits (not sure about the word, but I hope you know what I mean)

In one bowl, whip the mascarpone and in another one whip the cream, then mix them together (it doesn’t really matter if you add mascarpone to the cream or the other way round), whip for a short while again and then mix in a bit of sugar and whip some more. This is what will account for the sweetness of the tiramisu, as the sponge-biscuits will be quite bitter, so decide how sweet you want it to be.
Take a pretty bowl and put a layer of biscuits on the bottom, sprinkle with cooled down strong coffee (made from instant coffee) and rum, then put on a layer of the cream and repeat as long as you have ingredients. When you apply the last layer of cream, cover it with bitter cocoa and decorate. I used some white chocolate stars, but you could decorate it with whipped cream, chocolate chips, fruit... Leave it in the fridge overnight.





Madeleines
150 g almonds
210 g half-coarsely ground flour(?)
80 g white small-crystal sugar
80 g brown small-crystal sugar
2 eggs
150 ml milk
2 table spoons oil

Put almonds into a pot and add hot water (almost boiling). Put a pan on medium heat. After several minutes, start removing the “skin” (what a horrible plant biologist I am) of the almonds. Toss the bare almonds on the pan. As for the last 5 almonds or so, cut them into small chips and keep them for later. From time to time, stir the almonds. When they become pale gold, put them on a plate to cool down and “fry” the almond chips to get the same color, than put them aside as well. When the whole almonds have cooled down, mince them to very very small pieces, almost rough powder-like. Then mix the almond powder, flour and sugar in one bowl and the eggs, oil and milk in another. Then add the liquid mixture to the powderish one. If it’s too thick, just add a bit of oil and some more milk, this recipe is pretty robust and can survive slight disproportion. Preheat the oven for 180 °C and smear madeleine moulds with butter (no flour!!!!). Pour the dough in the moulds (it shouldn’t reach till the very edges, but the dough isn’t really gonna raise during baking). Bake until the madeleines turn gold with brown edges. They’re really easy to tap out, so if you have only a few moulds, just tap the madeleine out immediately after it’s done, smear some butter on the mould (it’s easy since it’s hot) and pour in a new batch of dough.

Moje rodičovstvo celkem často cestuje a někdy se stává, že je nepřítomné naráz. Takže zrovna nedávno jsem byla zanechána samotná jakožto otrok svého (ne až tak) malého bráchy, dvou krvežíznivých koček, patolízalského psa a apatické činčily jakožto paní domu. Většinu času jsem strávila potácením se po domě jako zombie (dokonce mi modřinově zfialověla noha), nespaním v noci a spaním v poledne. Co mě ale vždy spolehlivě z tohoto zombifikovaného stavu, který je vyústěním spíše euforie z konce zkouškového než ze ztráty rodičovského dohledu, probují, je červený kroužek kolem data, kdy se rodiče vracejí. Takže jsem se urychleně probrala, vysmejčila celý dům a upekla madlenky. Když jsem byla v Angers, dostaly jsme s B. tip od jedné místní kamarádky na dobrou anglickou čajovnu (ano, jsem jediný exot, který ve Francii pije hnusné belgické pivo v irské hospodě a anglický čaj). Krom skvělého čaje jsem si tam objednala ještě sladké pečivo (scones), které mi přinesli s mascarpone a marmeládou. A jelikož mi madlenky přišly dost podobné, rozhodla jsem se je tatíkovi naservírovat právě s mascarpone (z kauflandu) a jahodovou marmeládou (od babičky). A jelikož člověku stačí toho mascarpone jen kousek (i když mu jeho modifikovaný recept vynese 25 madlenek místo slibovaných 12 v původní verzi), udělala jsem ještě tiramisu, abych se zbavila zbytku.

No, tohle všechno byl jen takový úvod k oněm dvěma receptům, sice jich je spousta na netu, ale tyhle dva, které vznikly především mou neschopností se řídit přesnými instrukcemi, mají u strávníků pozitivní odezvu, tedy jsem usoudila, že se o ně podělím. 

Tiramisu pro lenochy
Kelímek mascarpone

V jedné míse ušlehejte mascarpone, v druhé šlehačku. Pak je smíchejte (je jedno, co se k čemu přimíchá), ještě chvíli šlehejte, přidejte cukr a zase chvíli šlehejte. Krém určí celkovou sladkost tiramisu, protože piškoty budou spíš hořké, takže to přizpůsobte své chuti.
Do hezké mísy naskládejte na dno piškoty, pocákejte je rumem a vystydlou silnou kávou, přidejte vrstvu krému a opakujte, dokud máte ingredience. Poslední vrstvu krému posypte hořkým kakaem a ozdobte, já použila čokoládové hvězdičky, ale šla by třeba šlehačka, ovoce, čokoládové hobliny... Nechte v ledničce přes noc.





Madlenky
150 g mandlí
210 g polohrubé mouky
80 g bílého krupicového cukru
80 g hnědého krupicového cukru
2 vejce
150 ml mléka
2 lžíce oleje

Mandle přelijte horkou vodou a dejte hřát pánev na střední stupeň. Po pár minutách začněte mandle loupat a ty oloupané rovnou házejte na pánev. Co se týče posledních 5 mandlí nebo tak, nakraájejte je na malé kousky a odložte stranou. Mandle na pánvi míchejte a až zezlátnou, odsypte je stranou a opražte ty nasekané na kousky, pak je také odložte. Poté, co se ty nenasekané mandle ochladí, rozmixujte je na co nejjemnější kousky, skoro až hrubý prášek. Pak smíchejte mandle, mouku a cukry v jedné míse, tekuté přísady v druhé. Pak postupně vmíchejte tekutou směs do sypké. Pokud bude těsto moc husté, prostě ho dle potřeby dořeďte mlékem a olejem, tenhle recept je dost robustní a snese určité variace v poměrech. Předehřejte troubu na 180 °C a vymažte formičky máslem (nevysypávejte moukou!). Nalijte těsto do formiček - aby bnebyly plné až po okraj, ale zase žádný strach, to těsto rozhodně nenabude olbřímích rozměrů. Pečte dokud madlenky nebudou zlaté s jemně hnědými okraji. Vyklepávají se vážně snadno, takže pokud máte málo formiček, prostě je vyndejte z trouby, hned vyklepejte, znovu vymažte formičku (jde to snadno, jak je horká) a nalijte další várku.

V jedné míse ušlehejte mascarpone, v druhé šlehačku. Pak je smíchejte (je jedno, co se k čemu přimíchá) a ještě chvíli šlehejte. Stačí toho celkově jen malinko. Na fotkách máte návrh na servírování - omlouvám se za barvy, umělé osvětlení u nás v kuchyni je zlo.

  3. I love the starts on your tiramisu,I have never made it but it looks yummy enough!

    I am like you - if I have the house for myself, it usually turn into a big mess and I completely forget to have decent sleeping hours.
