Recipe: Valentine's Day Cakes

 




I know I could have prepared this post sooner, but I hope that two days in advance are enough if you want to make these mini cakes for Valentine’s Day. Here, we don’t really celebrate Valentine’s Day, because the Czech traditional romantic day is May 1st - in Prague, couples might go to the Petrin hill and kiss in front of the statue of Macha, who was the most famous poet of the Romantic movement. And why 1st May? Because Macha’s most famous poem “May” begins with:

“ Late evening, on the first of May
the twilit May
the time of love”

Even though the poem is written in a beautiful language (the English translation that comes up as the first google link is pretty good I think, but still doesn’t do justice to the play with sounds in Czech), and is indeed about love, it’s very sad. Not the kind of romance you’d like to experience. But anyway, this is the tradition here. I find it sweeter than obligatory presents and dinner dates in February, but I haven’t really celebrated either of these two dates (yet). I think I’ll post some pictures of Petrin hill in May for you to see. :)

Anyway, because I know that many of my readers do celebrate Valentine Day, I prepared a recipe for mini cakes. I think they taste really good and are pretty quick to make (4 hours including a lot of waiting). I kept both the decorations and flavors really simple (chocolate, cognac, strawberries), and tried to go for a more mature look. I mean, marzipan hearts and flowers are cute, but it’s not bad to go with a different flavor/look from time to time.

Base:
220 g of butter
125 g/ml of chocolate cream (>40% fat)
15 full teaspoons of bitter cocoa
220 g of dark chocolate or chocolate meant for cooking
4 eggs
a bit of flour

Sorry, I have no idea how many serving would it make, because my hungry family managed to liquidate the rest of the cake before I came home and had a chance to finish cutting the remaining hearts. I think it could be around 12.

If you plan to decorate the cakes with frozen strawberries, take them out from the freezer and put them on a sieve to de-frost. The sieve is good because if you only put them in a bowl, they will bath in the water that escapes as they defreeze and they’ll become even more mashy than usually.

In a pot, mix small pieces of butter, chocolate and cream. Heat on low flame (2 or 3 out of 9 heating intensities - recalculate to suit your cooker). After 10 minutes or so add the cocoa and wait until everything melts and creates a homogenous liquid. Stir from time to time. Lower the heat to the lowest setting possible. Smear butter on a rectangular cake tin and dust with flour. Pre-heat the oven for 180 °C (electric one).


In a bowl, whisk all 4 eggs.


Start pouring the liquid in the bowl with the eggs - always add a bit of the liquid, mix well and repeat until you get a thick homogenous mash. Pour it inside the tin and put the tin inside the oven. Bake for 45 minutes, but try with a stick - when there’s no dough sticking to it even in the middle of the cake, it’s done.



Take out the tin and let it cool down for about 1 hour, then tip out the cake on a large chopping board and let it cool down until the cream is ready.





Cream:
60 g of dark chocolate
60 g of butter
the rest of the chocolate cream (about 70 g/ml)
4 spoons of powdered sugar
a bit of cognac (I’d go for the one made form eggs, but the normal kind is good too)

Put the chocolate and a tiny bit of butter inside a pot and heat on the lowest flame possible.


Mix the rest of butter with sugar.


Whip the cream. Then whip separately the butter and sugar.


Pour melted chocolate inside the bowl with butter (by small parts) and whip. Then add the cognac bit by bit, whip constantly.


Then mix in the whipped cream (again, bit by bit). Put into the fridge for about 1 hour.


Decorations:
Cut small hearts from the cake with a cookie cutter.



You can see a couple of designs I came up with, but you can do whatever you want. This cream hold shape very very well even without any additives, so you don’t have to worry it wouldn’t hold. I think that the strawberries compliment it very well both in flavor and color/design. You could add chocolate chips too, but I think it’s not necessary. As for the taste, the cake is very chocolate-y and tastes a bit like something between a cheesecake and crème brûlée. There is a thin crust on both the upper and bottom side and the dough in between is very soft. The cream is rather sweet and thick, so don’t put on too much. On the other hand, the more strawberries the better, because they balance out all the sweetness. I really hope you’ll like it. <3

(Omlouvám se, česká verze mi nějak nejde zarovnat do bloku, nevím co se zase bloggerovi nelíbí.)
Mohla jsem tento článek připravit dřív, ale byla jsem lehce ve skluzu (například jsem neodkladně řešila svoje vlasy, že), tak doufám, že dva dny dopředu jsou dostatečné na to, abyste sehnali ingredience, pokud budete chtít tyto Valentýnské minidortíky upéct. V anglické verzi jsme se trochu rozepsala, ale předpokládám, že Čechům a Slovákům nemá cenu se tu rozepisovat o tom, proč (ne)slavíme Valentýna a jak vznikla tradice prvního Máje. Tedy pokud tento svátek slavíte, můžete si upéct dort pozítří, pokud ne, tak myslím, že bude chutnat stejně dobře i na narozeniny. :)

Myslím, že tyhle zákusky chutnají dobře a jsou celkem rychlé (4 hodiny a z toho dost času prostě jen čekáte). Nechala jsem jak dekorace tak chuťové kombinace poměrně jednoduché (čokoláda, koňak, jahody), a snažila se o „dospělejší“ vzhled. Ne že by bylo něco špatného na marcipánových holubičkách, srdíčkách a kytičkách, ale občas to chce změnu. :)

Korpus:

220 g másla (poctivého, rozhodně ne Hery)
125 g/ml čokoládové smetany ke šlehání
15 vrchovatých lžiček hořkého kakaa
220 g čokolády na vaření
4 vejce
trocha mouky

Bohužel nevím, kolik porcí z toho bude, protože moje rodina kobylek spásla zbytek těsta, než jsem přišla domů a dovykrájela srdíčka. Ale odhadem by to mohlo být tak 12 kousků.  :)

Pokud budete ke zdobení používat jahody a máte mražené (ono kde byste tak čerstvé v tuto doby taky sehnali, že...), tak je ze všeho nejdřív dejte rozmrznou na nějaké sítko - na sítko proto, aby se nekoupaly ve vlastní šťávě a nebyly ještě bláznivější, než budou tak jako tak.

V hrnci smíchejte kousky másla, nalámanou čokoládu a smetanu. Zahřívejte na nízkém plameni (u mě 2. - 3. stupeň z 9, tak si to přepočtěte dle svého vařiče). Po cca 10 minutách přidejte kakao a počkejte, než to vytvoří homogenní tekutinu. Čas od času míchejte. Pak snižte teplotu na nejnižší, která na vašem sporáku je. Vymažte hranatou dortovou formu máslem a vysypte moukou. Předehřejte troubu na 180 °C.


V míse rozšlehejte vejce.


Začněte nalévat čokoládovou směs k vajíčkům - opatrně a po kouskách, po každém přidání pořádně zamíchejte. To opakujte tak dlouho, než bude všechny čokoládová kaše v míse a vytvoříte homogenní kaši. Nalijte směs do formy a dejte péct na 45 min, ale až se tato doba bude chýlit ke konci, zkoušejte dřevěnou špejlí, jestli na ní ulpívá těsto. Ve chvíli, kdy ji vytáhnete čistou i po zapíchnutí doprostřed formy, je dort hotový.



Vyndejte korpus z trouby a asi hodinu ho nechte chladit. Po hodině jej vyklopte na dřevěné prkno a nechte vychladnout, než budete mít hotový krém.







Krém:
60 g tmavé čokolády nebo čokolády na vaření
60 g másla
zbytek smetany (asi 70 g/ml)
4 lžíce moučkového cukru
trocha koňaku (raději vaječného, ale je to dobré i s normálním a přežil by se i rum nebo jeho úplné vypuštění)
Nalámejte čokoládu do kastrůlku a přidejte malinko másla, zahřívejte na nejnižším stupni než se zcela rozpustí.


Utřete zbytek másla s cukrem.


Ušlehejte smetanu v jedné míse a v druhé ušlehejte utřené máslo s cukrem.


Rozehřátou čokoládu postupně přilévejte k máslu a stále šlehejte. Poté postupně přilévejte alkohol a opět šlehejte.


Pak stejně opatrně vmíchávejte ušlehanou smetanu.


Dejte na 1 hodinu (plus mínus) do lednice. 

Dekorace:
Vykrájejte z korpusu malá srdíčka vykrajovátkem. Tady je pár návrhů, co mě napadly (a stihle jsem je vyrobit, než jsem musela letět na japonštinu), ale fantazii se meze nekladou. Tento krém drží tvar velmi dobře i bez jakýchkoliv hnusných ztužovadel, takže se nemusíte bát, že by vám ozdoby spadly. Myslím, že jahody to dobře doplňují jak chuťově tak barevně. Daly by se použít i čokoládové hobliny, ale přijde mi to už možná i zbytečné. Co se týče chuti, tak korpus chutná trochu jako něco mezi cheesecakem a crème brûlée. Je na něm tenounká kůrka na obou stranách a uprostřed je měkký a nadýchaný. Krém je dost sladký, tak je lepší s ním spíš šetřit. Naopak jahod klidně použijte hodně, dobře tu sladkost vyváží. A doufám, že vám bude chutnat. <3
