First, let
me warn you - when I say inspired, it is inspired with a giant I and “” around
- and if you’re a fan of traditional and conservative procedures, it will give
you the creeps. On the other hand, if you’re one to mix whatever sounds mixable
and combine whatever is combinable, you might like this. Tl; dr: This recipe
has actually nothing in common with Greek cuisine.
So, I
bought squid, because it wasn’t expensive and it caught my eye at Tesco. I
suppose that buying squid at Tesco in Prague
(geography recap: Czech
republic = no sea) is debatable, but one of
the bottom lines from my dietology class was “whatever seafood better than no
seafood” (in moderation, you know, accumulation of heavy metals and such). So,
I got one ready-to-cook (without intestines and so) squid and brought it home.
My dad kept poking it (hello, I’m gonna eat it tomorrow, you know), my mum
asked if she should call a notary so that I could write down my last will and
my brother suggested we poison our cats. But, I’m not prejudiced against Tesco
squids and decided to give it a try.
I’ve eaten
squids before, but the problem is, one of the most popular ways of preparing
squids includes garlic, and I hate hate HATE chewy squids with garlic. I
browsed a couple of recipes online but I couldn’t find any which would be quick
and included ingredients I had at home. In the end, I was forced to pretty much
come up with my own, and I thought it tasted really good, so I’m sharing it with
you!
Ingredients:
Squid, cut
into reasonable pieces
Olive oil
Lemon
Pepper
(black, green, red... various kinds)
Basil
Salt
Tzatziki
spice mixture
Yoghurt and
sour cream (Greek yoghurt for gourmets, low-cal for us obsessed with weight)
Chicory
(well we didn’t have cucumber)
Olives
Scallion
A bit of chili
pepper
Mix lemon
sauce, a bit of oil, salt, a bit of basil and pepper in a flat bowl and put the
squid inside, smear with the sauce. While your squid bathes, Cut the chicory
into small and thin slices and put it in a bowl. Add one cup of yoghurt (one
cup per one smallish chicory) and a couple of spoons of sour cream. Toss in
some tzatziki spice and mix well. Put it in a fridge and heat the grill (we
have a small contact grill, but I guess you could use the grill setting in an
oven or just plain ol’ grill if the weather is nice, alternatively I guess that
frying would work too if you have no other option, but I think the meat texture
would change). Put the squid on the grill and let it, well, grill. From time to
time, pour some sauce over it and turn it upside down until it seems to be
done. Meanwhile, put the fake tzatziki on a plate, decorate with scallion
leaves (Cut the scallion leaf, which is tubular, into halves, then cut this
half leaf from one end to the other but start a bit further away from the edge,
so that you get a circular structure, not two straight pieces, I guess you’ll
get it from the picture) and an olive. Cut a lemon into half-circles and make a
small spiral from the chili pepper. Serve the squid preferably still warm.
I think
this is great for hot, sunny weather, because the cold tzatziki is really light
and refreshing and in general, this is pretty healthy (well, the grill is
debatable...) - almost no carbs, just seafood, chicory and dairy. And the
grilled squid is not chewy at all, it has a bit of chicken-like texture.

Řecká oliheň s Tzatziki - rychlá, zdravá a vlastně ne moc řecká
Tedy pokud máte rádi tradiční recepty, z tohohle se
osypete ještě dřív, než to sníte - doporučuji pouze pokud mícháte vše co vypadá
míchatelně a vaším kuchařským guru je Pejsek s Kočičkou.
Tak jsme si jednou koupila oliheň, protože na mě pomrkávala
v Tescu a nebyla moc drahá. Uznávám, že kupovat si tady v Čechách
oliheň není úplně běžné, ale z dietologie jsem si odnesla, že jakékoliv
mořské kreatury lepší než žádné (mastné kyseliny a tak, zase radši to
nepřehánět kvůli těžkým kovům - ale 1 - 2 porce týdně jsou celkem nutné). Takže
jsem si koupila jednu takovou vykuchanou trubičku a dovlekla ji domů. Táta do
ní dloubal (ehm, já to plánuju jíst), máma se ptala, jestli má zavolat notáře,
abych sepsala závěť a bratr navrhovat, že odpravíme naše kočky. Ale já proti
olihním z Tesca žádné předsudky nemám a rozhodla jsem se ji
zblajznout.
Už jsem olihně párkrát měla, ale problém je, že se obvykle
dělají na česneku. A já vážně nesnáším olihně chutnající jak podešev vykoupaná
v česnečce. Takže mi nepomohly ani recepty na netu a musela jsem si
vymyslet vlastní, který podle mě dopadl vážně dobře, pročež ho tedy s vámi
vůbec sdílím.
Suroviny:
oliheň nakrájená na rozumné kousky
olivový olej
citron
různobarevný pepř
bazalka
sůl
směs koření na tzatziki
jogurt (řecký pro fajnšmekry, nízkotučný pro nás posedlé
váhou)
kysaná smetana
čekanka (no co, neměli jsme okurku a náhodou to s ní
chutná fakt dobře)
olivy
naťová cibulka
kousek chilli papričky
Smíchejte citrónovou šťávu, kousek soli, koření a olej
v plošší misce a naložte do toho oliheň. Zatímco se koupe, nakrájejte
čekanku na co nejtenčí kousky, smíchejte je s jogurtem, smetanou a kořením
na tzatziki (na jednu menší čekanku vychází jeden jogurt). Dejte tzatziki-čekanku
do ledničky a popatlanou oliheň začněte grilovat. Pokud nemáte kontaktní gril
,mělo by fungovat a nastavení v troubě, za hezkého počasí samozřejmě
venkovní gril a pokud vážně nemůžete jinak, asi by se dala i osmažit, ale už to
nebude zrovna ono. čas od času ji potřete dalším kusem omáčky a obraťte. Než se
začne tvářit hotově (tak zlatavě), naaranžujte čekanku. Rozprostřete směs na
talíř, uřízněte jeden kulatý list cibulky a rozřízněte ho napůl čímž přestane
mí kruhový průřez a hezky se zplacatí) a nařízněte ho od jednoho konce ke
druhému, ale ne až úplně do krajů - abyste dostali tvar písmene O. Vytvarujte
lístky a doprostřed dejte olivu. Nakrájejte citron na půlkolečka a
z chilli papričky udělejte malé spirálky.
Tohle je fajn recept na léto, protože je velmi lehký a
osvěžující a i celkem zdravý (no, ten gril je trochu diskutabilní) - málo
sacharidů a tuku, oliheň, čekanka a mléčné produkty jsou zdravé. A hlavně ta
grilovaná oliheň není tuhá - chutná skoro jako kuře - a není na ní žádný hnusný
česnek.
